Ingredients
  

  • 2 pounds ground beef 85% lean recommended
  • 2/3 cup grated Parmesan cheese
  • 2/3 cup sugar-free ketchup divided
  • 1/2 cup minced onion
  • 1/2 cup almond flour
  • 3 cloves minced garlic
  • 2 large eggs beaten
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon homemade ranch seasoning or 2 teaspoons store-bought
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons brown monk fruit/allulose sweetener or Brown Swerve
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine half of the sugar-free ketchup with all the other ingredients, except the ground beef, brown sweetener, and smoked paprika. Mix everything really well until it's fully blended.
  • Gently add the ground beef to the bowl. Mix just enough until everything is combined. Be careful not to overmix, as this can make your meatloaf dense and tough.
  • Press the meat mixture evenly into a 9x5-inch loaf pan that's been lightly sprayed with nonstick spray. Bake for 35 minutes.
  • While it's baking, mix the remaining sugar-free ketchup with the brown sweetener and smoked paprika in a small bowl.
  • After 35 minutes, remove the meatloaf from the oven and spread the ketchup topping evenly over the top.
  • Return the meatloaf to the oven and bake for another 20 minutes.
  • Once baked, allow the meatloaf to rest for 10 minutes before slicing and serving. This helps it stay moist and hold its shape beautifully!
