- 2 pounds ground beef 85% lean recommended
- 2/3 cup grated Parmesan cheese
- 2/3 cup sugar-free ketchup divided
- 1/2 cup minced onion
- 1/2 cup almond flour
- 3 cloves minced garlic
- 2 large eggs beaten
- 2 tablespoons fresh chopped parsley
- 1 tablespoon homemade ranch seasoning or 2 teaspoons store-bought
- 2 teaspoons Worcestershire sauce
- 2 teaspoons brown monk fruit/allulose sweetener or Brown Swerve
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine half of the sugar-free ketchup with all the other ingredients, except the ground beef, brown sweetener, and smoked paprika. Mix everything really well until it's fully blended.
Gently add the ground beef to the bowl. Mix just enough until everything is combined. Be careful not to overmix, as this can make your meatloaf dense and tough.
Press the meat mixture evenly into a 9x5-inch loaf pan that's been lightly sprayed with nonstick spray. Bake for 35 minutes.
While it's baking, mix the remaining sugar-free ketchup with the brown sweetener and smoked paprika in a small bowl.
After 35 minutes, remove the meatloaf from the oven and spread the ketchup topping evenly over the top.
Return the meatloaf to the oven and bake for another 20 minutes.
Once baked, allow the meatloaf to rest for 10 minutes before slicing and serving. This helps it stay moist and hold its shape beautifully!
