Heat your oven to 350°F (175°C).
In a big bowl, stir together the almond flour, coconut flour, salt, and baking powder.
In a small pan over low heat, melt the butter and mozzarella together. Stir until smooth and stretchy, then take it off the heat.
Crack the first egg into the flour mix, then pour in the warm cheese mixture. Mix everything until a soft, firm dough forms.
Place the dough between two sheets of parchment paper and flatten it into a rectangle about 8x14 inches.
Cut the rectangle into 8 long strips (about 1 inch wide each).
Wrap one dough strip around each hot dog like a bandage, leaving a small gap for the "face."
Whisk the second egg and brush it over the wrapped dogs.
Place them on a baking sheet lined with parchment paper. Bake for 15–20 minutes, until the dough is golden and puffy.
Stick two cloves into each dog for eyes (just for fun—don’t eat the cloves!).
