Instructions
Mix all filling ingredients in a bowl and set aside.
In a separate bowl, beat the eggs.
Add heavy cream, water, and vanilla to the eggs, whisking well.
Gradually incorporate coconut flour and cocoa powder until smooth.
Pour about ΒΌ cup of batter into a lightly oiled non-stick skillet, spreading evenly.
Cook on low heat for about a minute, then flip and cook briefly.
Repeat until all batter is used.
Spread a tablespoon of filling on each crepe, then roll up.
