Ingredients
  

  • 8 medium zucchini, sliced in half lengthwise
  • 1 cup grated parmesan cheese
  • 1 cup crushed pork rinds
  • 1/2 tbsp dried oregano
  • 1/4 tsp coarse sea salt
  • 1/2 tsp ground black pepper

Instructions
 

  • Get started by preheating your oven to 350°F and lining a baking sheet for easy cleanup.
  • Arrange your freshly sliced zucchini halves cut-side up on the prepared baking sheet.
  • In a small bowl, toss together the parmesan cheese, crushed pork rinds, dried oregano, sea salt, and black pepper to create a super tasty, low-carb seasoning blend.
  • Generously sprinkle about 1.5 to 2 tablespoons of the seasoned crumb mixture over the top of each zucchini stick.
  • Pop them in the oven to bake for 15 minutes, then switch to the broil setting for an extra 5 to 6 minutes until the topping is beautifully golden-brown and crispy.
  • Serve these warm, crispy treats alongside your favorite clean marinara sauce, a light veggie dip, or with a spicy splash of hot sauce!
