A spooky and delicious keto-friendly take on the classic peanut butter blossom, perfect for your Halloween treat table. These low-carb cookies feature a rich peanut butter dough and a smooth chocolate center.
Preheat oven to 325°F and line a baking sheet with parchment or silicone mat.
In a bowl, beat peanut butter and butter until creamy. Beat in sweetener, then egg and vanilla.
Add almond flour, peanut flour, baking soda, and salt. Beat until dough forms.
Roll dough into 1-inch balls, place 2 inches apart on sheet, and flatten to ½-inch thick.
Bake 12–15 minutes until puffy and light golden. Remove from oven and press a well into each cookie with the back of a rounded teaspoon. Cool completely.
For the chocolate center: Microwave chocolate chips and 2 tbsp peanut butter in 30-second bursts, stirring until smooth.
Spoon a small dollop of chocolate into each cookie well. Refrigerate until firm, about 30 minutes.
