Ingredients
  

Cookie Dough

  • 3/4 cup creamy natural peanut butter
  • 1/4 cup butter softened
  • 2/3 cup Swerve Brown
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup peanut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Chocolate Center

  • 3 oz keto chocolate chips
  • 2 tbsp creamy natural peanut butter

Instructions
 

  • Preheat oven to 325°F and line a baking sheet with parchment or silicone mat.
  • In a bowl, beat peanut butter and butter until creamy. Beat in sweetener, then egg and vanilla.
  • Add almond flour, peanut flour, baking soda, and salt. Beat until dough forms.
  • Roll dough into 1-inch balls, place 2 inches apart on sheet, and flatten to ½-inch thick.
  • Bake 12–15 minutes until puffy and light golden. Remove from oven and press a well into each cookie with the back of a rounded teaspoon. Cool completely.
  • For the chocolate center: Microwave chocolate chips and 2 tbsp peanut butter in 30-second bursts, stirring until smooth.
  • Spoon a small dollop of chocolate into each cookie well. Refrigerate until firm, about 30 minutes.
