Brownie Batter

  • 1/2 cup salted butter melted
  • 1/2 cup warm water
  • 2 large eggs at room temperature
  • 2/3 cup low-carb sweetener (such as Joy Filled Eats Sweetener, monk fruit, or allulose)
  • 1/2 cup almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup coconut flour
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt

Peanut Butter Swirl

  • 1 cup creamy peanut butter natural (with no added sugar)
  • 2 ounces cream cheese softened
  • 2 tablespoons salted butter melted
  • 1/4 cup low-carb sweetener (such as Joy Filled Eats Sweetener, monk fruit, or allulose)

Instructions
 

  • Prepare Your Pan: Start by preheating your oven to 350°F (175°C). Lightly grease a 9x9 inch baking dish, then line it with parchment paper, leaving some overhang on the sides for easy lifting later.
  • Mix Wet Ingredients: In a large bowl, whisk together the melted butter, warm water, and room temperature eggs until they are nicely combined.
  • Add Dry Ingredients: Gradually stir in the 2/3 cup sweetener, almond flour, unsweetened cocoa powder, coconut flour, vanilla extract, baking powder, and salt. Mix until you have a smooth, rich brownie batter.
  • Pour into Pan: Pour this delicious brownie batter evenly into your prepared baking dish.
  • Whip Up the Topping: In a separate, smaller bowl, combine the peanut butter, softened cream cheese, 2 tablespoons of melted butter, and the 1/4 cup of sweetener. Stir until it's well mixed; it will be quite thick.
  • Add Peanut Butter Dollops: Using two spoons (it makes it easier!), drop generous dollops of the thick peanut butter mixture over the chocolate brownie batter in the pan. No need to swirl unless you prefer; the dollops will create lovely pockets of flavor.
  • Bake to Perfection: Place the baking dish in your preheated oven and bake for 35-40 minutes. The brownies are ready when they look puffed up and the center is no longer jiggly.
