Ingredients
  

For the Chocolate Shell

  • 10 ounces sugar-free semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • 3 tablespoons powdered monk fruit or allulose for chocolate

For the Peanut Butter Filling

  • 1/3 cup no sugar added peanut butter
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons powdered monk fruit or allulose for peanut butter

Instructions
 

  • In a small bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring well each time, until completely smooth and melted.
  • Whisk in the 3 tablespoons of powdered sweetener until fully combined. The mixture should be pourable.
  • Pour half of the melted chocolate mixture evenly into the bottom of 12 silicone muffin cups. Gently swirl each cup so the chocolate slightly coats the sides. Place them in the fridge to set while you prepare the filling.
  • In a separate bowl, add the peanut butter, butter, 2 tablespoons of powdered sweetener, and vanilla extract. Microwave briefly, just until the mixture is softened enough to stir easily, but not fully liquid.
  • Using a small scoop (about 2 teaspoons), drop portions of the peanut butter mixture into the center of each chocolate-lined muffin cup. Gently flatten and spread the peanut butter, keeping it slightly away from the edges. Return the cups to the fridge to chill until the peanut butter layer is firm.
  • Pour the remaining melted chocolate mixture over each peanut butter center, starting around the edges and then covering the tops. Gently swirl to ensure an even coating.
  • Place the cups back into the fridge to set completely. Once firm, they are ready to enjoy! Store these delicious treats in an airtight container in the refrigerator.
