Ingredients
  

  • 1 1/2 cups almonds
  • 1 1/4 cups pecans
  • 1 cup shredded coconut
  • 1/2 cup pumpkin seeds
  • 1/3 cup granulated erythritol-based sweetener
  • 1/3 cup vanilla whey protein powder
  • 1/3 cup creamy peanut butter
  • 1/4 cup butter
  • 1/4 cup water

Instructions
 

  • Prep your space by preheating your oven to 300°F and lining a large baking sheet with parchment paper.
  • In a food processor, pulse your almonds, pecans, shredded coconut, and pumpkin seeds until they form coarse, rustic crumbs with some nice chunky bits left for texture. Transfer this mix to a bowl and stir in your sweetener and protein powder.
  • Gently melt the peanut butter and butter together in a microwave-safe bowl. Pour this warm blend over your dry ingredients and stir well. Add the water, mixing until the ingredients begin to bind and clump together.
  • Spread the mixture evenly across your baking sheet, pressing it down firmly with your hands to ensure the perfect crunch.
  • Bake for 30 minutes, stopping halfway through to stir gently and press the mixture down again so it bakes evenly.
  • Let your healthy granola cool completely on the counter to crisp up beautifully. Once cooled, break it into delicious, crunchy clusters!
