  • 1.5 cups almonds
  • 1.25 cups pecans
  • 1 cup shredded coconut (or almond flour)
  • 0.5 cup pumpkin seeds
  • 0.33 cup granulated erythritol-based sweetener
  • 0.33 cup vanilla whey protein powder (or egg white protein powder)
  • 0.33 cup peanut butter
  • 0.25 cup butter (or coconut oil for dairy-free)
  • 0.25 cup water

Instructions
 

  • Get your oven ready by preheating it to 300°F (150°C), then line a large baking sheet with parchment paper for easy cleanup.
  • In a food processor, pulse together the almonds, pecans, shredded coconut, and pumpkin seeds until they form a coarse, crumbly mix with some delightful bigger bits. Move this nutty blend to a large bowl, then stir in your sweetener and protein powder until everything is well combined.
  • Gently melt the peanut butter and butter (or coconut oil) together in a microwave-safe bowl. Pour this warm, creamy mixture over your nut and seed blend. Stir thoroughly, then add the water. You'll notice the granola starting to clump together beautifully now!
  • Spread the granola mix evenly onto your prepared baking sheet, pressing it down firmly with your hands – this helps create those lovely clusters! Bake for 30 minutes, making sure to stir it halfway through and press it down again. Once baked, remove it from the oven and let it cool completely on the sheet; it will crisp up even more as it cools.
  • Once fully cooled, break the granola into your desired cluster sizes with your hands. Enjoy your homemade, healthy crunch!
