Ingredients
  

  • 6 tbsp Coconut Flour 45 g
  • 2 tbsp Sugar-Free Sweetener e.g., erythritol, 24 g
  • 0.25 cup Unsalted Butter 60 g, melted
  • 1 Large Egg 50 g
  • 2 cups Pecan Pieces 200 g
  • 0.5 cup Unsalted Butter 113 g
  • 2/3 cup Sugar-Free Sweetener allulose recommended, 133 g
  • 1 cup Heavy Cream 240 ml
  • 0.5 tsp Salt
  • 2 Large Eggs room temperature, 100 g
  • 1 tsp Vanilla Extract
  • 0.5 cup Sugar-Free Chocolate Chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper.
  • Mix coconut flour, sweetener, melted butter, and egg until a dough forms. Press evenly into the pan's base. Bake for 7 minutes, then let cool.
  • In a saucepan, melt butter over medium-low heat. Stir in sweetener until dissolved. Add cream and salt, simmer for 15 minutes, stirring occasionally, until golden and thickened.
  • Remove from heat, let cool slightly, then whisk in eggs and vanilla.
  • Arrange pecans over the cooled crust. Pour the filling evenly over pecans. Sprinkle chocolate chips if using.
  • Bake for 29-33 minutes until set. Cool, then refrigerate for 20 minutes before slicing.
