Equipment

  • Large Skillet or Wok

Ingredients

For the Sauce

  • 1/4 cup beef broth
  • 1/4 cup tamari
  • 1.5 tbsp toasted sesame oil
  • 1 tbsp chili garlic sauce (or Sriracha)
  • 4 garlic cloves, minced
  • 1/2 tsp ground ginger
  • 1/2 tsp glucomannan (or 1/4 tsp xanthan gum)

For the Stir Fry

  • 2 lbs flank or top sirloin steak, thinly sliced
  • 2 tsp baking soda
  • 2-3 tbsp avocado oil
  • 1/4 large onion, thinly sliced
  • 1 large red pepper, thinly sliced
  • 1 large green pepper, thinly sliced

Instructions

  • Whip Up the Sauce: Simply combine all your sauce ingredients in a bowl and whisk them well. Set this flavor-packed mixture aside for later.
  • Tenderize the Beef: In a big bowl, toss your thinly sliced steak with the baking soda until every piece is coated. Let it sit for about 15 minutes to work its magic. Afterward, rinse the steak really well under running water, drain it, and pat it dry.
  • Sear the Steak: Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Sear the steak in batches, about 1 minute per side. Remove cooked steak to a plate and repeat until all pieces are browned.
  • Sauté the Veggies: Add the sliced onion and peppers to the same pan. Stir-fry them for 2 to 3 minutes until they become just tender and slightly crisp.
  • Bring It All Together: Return the seared steak to the pan with the vegetables. Pour in your prepared sauce. Cook, stirring gently, until the sauce thickens. Taste and season with salt and pepper.
