Instructions
Start by preheating your oven to 425°F (220°C).
In a medium-sized bowl, whisk together the brown sugar replacement, pressed garlic, two tablespoons of avocado oil, Dijon mustard, apple cider vinegar, paprika, and the optional chipotle powder. Mix it until you have a smooth, thick paste.
Pat the pork tenderloin super dry with paper towels. Then, sprinkle it all over with salt and pepper.
Heat the remaining 1 tablespoon of avocado oil in an oven-safe skillet (cast iron works great!) over medium heat. Carefully place the seasoned pork tenderloin in the hot pan and brown it nicely on all sides for about 4 minutes.
Take the skillet off the heat. Now, generously spread that delicious garlic paste all over the browned pork tenderloin pieces.
Pop the entire skillet (uncovered) into your preheated oven. Let it bake for 18 to 25 minutes, or until an instant-read thermometer tucked into the thickest part of the pork reads 140°F (60°C).
Once cooked, remove the skillet from the oven. Let the pork rest for 5 minutes before slicing. This crucial step helps keep it wonderfully juicy!
