  • 1 tsp Vanilla Extract
  • 0.25 tsp Pumpkin Pie Spice
  • 0.5 cup Coconut Flour
  • 0.5 tsp Baking Powder
  • 2 tsp Pumpkin Pie Spice
  • 0.25 tsp Salt
  • 0.33 cup Coconut Oil or unsalted grass-fed butter
  • 0.5 cup Lakanto’s Golden Monk Fruit Sweetener with Allulose
  • 2 pieces Egg Yolks room temperature
  • 1 tsp Vanilla Extract
  • 0.5 cup Canned Pumpkin Puree
  • 0.5 tsp Pumpkin Pie Spice
  • 0.25 cup Lakanto’s Classic Monk Fruit Sweetener with Allulose

Instructions
 

  • Preheat your oven to 350°F (177°C). Line an 18x13-inch baking sheet with parchment paper or a silicone mat.
  • Mix cream cheese, sweeteners, vanilla, and spices until smooth.
  • Add coconut oil, egg yolks, and pumpkin, blending well.
  • Incorporate coconut flour, baking powder, salt, and additional spices.
  • Form dough into cookies and place on prepared sheet.
  • Bake for 13 minutes until golden.
