Filling

  • 0.33 pound bacon diced and cooked until crisp
  • 0.33 cup finely chopped onion
  • 6 large eggs
  • 0.75 cup heavy cream
  • 0.25 cup water
  • 0.5 tsp salt
  • freshly ground black pepper to taste
  • 4 ounces shredded Gruyère or Swiss cheese (about 1 cup)
  • 2 sprigs fresh thyme

Instructions
 

  • Prepare the Crust: First, get your savory keto pie crust ready and gently press it into a 9-inch pie plate. Pop it into the refrigerator to chill while you gather the rest of your ingredients.
  • Preheat Oven: Preheat your oven to a cozy 350°F (175°C).
  • Crisp the Bacon: Dice your bacon and cook it in a frying pan over medium heat until it's beautifully browned and crisp, usually around 6 minutes. Drain off the excess fat, pat the bacon dry with a paper towel, and set it aside.
  • Whisk the Custard: In a medium bowl, whisk together the eggs, heavy cream, water, salt, and pepper until the mixture is light and frothy. This creates your rich quiche custard.
  • Sauté Onions: Leave about a tablespoon of bacon fat in the pan. Add the finely chopped onion and fresh thyme sprigs, then sauté until the onion becomes soft and fragrant. Remove the thyme sprigs once the onions are cooked.
  • Assemble the Quiche: Grab your chilled pie crust from the fridge. Layer about one-third of the shredded cheese, followed by one-third of the crispy bacon, and half of the softened onions into the bottom of the crust. Repeat with a second layer of cheese, onions, and bacon. Carefully pour the whisked egg custard mixture over these layers. Finish with the remaining cheese and bacon sprinkled on top.
  • Bake to Perfection: Bake your quiche for about 35 to 40 minutes. You'll know it's ready when the edges are set, but the very center still has a slight, delicate jiggle. Remove it from the oven and let it cool a bit in the pan before slicing and serving. This resting time helps it firm up beautifully!
