Prep your crust by pressing it into a 9-inch pie plate. Let it chill in the refrigerator while you prep the savory filling.
Preheat your oven to 350°F.
Cook the chopped bacon in a frying pan over medium heat for about 6 minutes until crisp and golden. Transfer the bacon to a paper towel-lined plate to drain off excess fat.
Whisk the eggs, heavy cream, water, salt, and pepper in a medium bowl until light and fluffy.
Leave about a tablespoon of bacon grease in your pan and sauté the onions with the fresh thyme sprigs until soft. Discard the thyme sprigs before assembly.
Retrieve your chilled crust. Layer one-third of your cheese, one-third of the bacon, and half of the sautéed onions on the bottom. Repeat with another layer of cheese, onions, and bacon. Pour the creamy egg mixture over the top, and finish with the remaining cheese and bacon.
Bake for 35 to 40 minutes, or until the edges are golden and the center has just a slight jiggle. Let it cool slightly before slicing and enjoying this wholesome meal!
