  • 2 cups Shredded Chicken
  • 1 tbsp Olive Oil
  • 1/4 cup Finely Chopped Broccoli
  • 1/4 cup Chopped Red Bell Pepper
  • 1/4 cup Matchstick Carrots
  • 4 oz Cream Cheese (softened)
  • 1 tbsp Ranch Seasoning
  • Parsley (for garnish)

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add carrots, peppers, and broccoli, sautéing until crisp-tender.
  • Incorporate the chicken and sauté until warmed through.
  • Transfer the mixture to a bowl, mixing in cream cheese and ranch seasoning until smooth.
  • Preheat the oven to 400°F (200°C).
  • Form 8 circles of cheese on a lined baking sheet, ensuring space between them.
  • Bake for 6-8 minutes until edges are golden and crispy.
  • Allow the cheese to cool for 2-3 minutes.
  • Spoon the filling down the center of each cheese circle.
  • Gently roll the cheese over the filling while still warm.
  • Let cool to crisp up, then serve garnished with parsley.
