Cookie Ingredients
- 2 cups almond flour
- 1/3 cup erythritol sweetener
- 2 tbsp coconut flour
- 1/4 tsp salt
- 6 tbsp melted butter
- 1 tsp vanilla or almond extract
- 1/2 cup sugar-free raspberry jam
Preheat oven to 350ΒΊF and prepare 16 muffin cups with grease or liners.
In a large bowl, combine almond flour, erythritol, coconut flour, and salt.
Mix in melted butter and extract until crumbly.
Press about 2 tablespoons of mixture into each muffin cup base.
Add half a teaspoon of raspberry jam on top of each crust.
Sprinkle remaining mixture over the jam.
Bake for 20-25 minutes until golden and cool completely before removing.
