Cookie Ingredients

  • 2 cups almond flour
  • 1/3 cup erythritol sweetener
  • 2 tbsp coconut flour
  • 1/4 tsp salt
  • 6 tbsp melted butter
  • 1 tsp vanilla or almond extract
  • 1/2 cup sugar-free raspberry jam

Instructions
 

  • Preheat oven to 350ΒΊF and prepare 16 muffin cups with grease or liners.
  • In a large bowl, combine almond flour, erythritol, coconut flour, and salt.
  • Mix in melted butter and extract until crumbly.
  • Press about 2 tablespoons of mixture into each muffin cup base.
  • Add half a teaspoon of raspberry jam on top of each crust.
  • Sprinkle remaining mixture over the jam.
  • Bake for 20-25 minutes until golden and cool completely before removing.
