Ingredients
  

For the Raspberry Swirl

  • 1 cup fresh raspberries
  • 2 tablespoons powdered sweetener (for berries)

For the Loaf Batter

  • 1 box King Arthur Baking Muffin Mix (see original recipe notes for alternatives)
  • 5 large eggs
  • 1/2 cup avocado oil (or melted butter)
  • 1 cup water
  • 1 teaspoon almond extract (or vanilla extract)

For the Glaze (optional)

  • 1/3 cup powdered sweetener
  • 1 1/2 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla or almond extract

Instructions
 

  • Get Ready: Preheat your oven to 350°F (175°C). Lightly grease a 9x5 inch metal loaf pan. For easy removal, line the bottom with parchment paper, leaving some overhang on the long sides, then grease the parchment too.
  • Make Raspberry Swirl: In a medium bowl, combine the fresh raspberries and 2 tablespoons of powdered sweetener. Mash them gently with a fork until you have a delightful raspberry sauce. Set this aside.
  • Mix the Loaf Batter: In a large bowl, pour in the King Arthur Baking Muffin Mix and whisk it well to remove any clumps. Add the 5 large eggs, 1/2 cup avocado oil (or melted butter), 1 cup water, and 1 teaspoon of almond extract. Stir everything together until just combined – don't overmix!
  • Assemble the Loaf: Spoon a thin layer of batter into the prepared loaf pan, just enough to cover the bottom. Dollop half of your raspberry sauce evenly over this batter. Use a knife to gently swirl the raspberry sauce into the batter for that beautiful marble effect.
  • Layer and Swirl Again: Add another layer of batter on top, followed by the remaining raspberry sauce. Swirl again with your knife. Finally, add the rest of the batter and gently smooth out the top surface.
  • Bake to Golden Perfection: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. Look for it to be beautifully risen and golden brown on top, and a toothpick inserted into the center should come out clean.
  • Cool Down: Once baked, remove the loaf from the oven and let it cool in the pan for 20 to 30 minutes. Then, use the parchment paper overhangs to carefully lift the loaf out and let it cool completely on a wire rack.
  • Prepare Optional Glaze: If you desire a sweet topping, whisk together 1/3 cup powdered sweetener, 1 1/2 tablespoons heavy whipping cream, and 1/2 teaspoon vanilla or almond extract in a medium bowl until smooth.
  • Drizzle and Enjoy: Drizzle the glaze generously over the completely cooled loaf. Slice and savor your delicious, healthy raspberry swirl loaf!
