Instructions
Preheat your oven to 400°F (200°C).
In a skillet over medium-high heat, cook the ground sausage and onions until browned and softened. Drain any excess grease.
Remove from heat and mix in the cream cheese until melted.
Stir in the ricotta and parmesan cheese, then let it cool.
On a parchment-lined baking sheet, form 8 evenly sized circles with the mozzarella cheese.
Bake for 6-8 minutes until the edges are golden and crispy.
Let the cheese cool for a minute, then add the filling down the center of each circle.
Gently fold the cheese over the filling to create roll-ups.
Allow the roll-ups to cool and crisp before serving.
