Ingredients
  

  • 1 pound Large Shrimp peeled and deveined with tails removed
  • 1/2 pound Ground Pork
  • 4 cups Cooked Cauliflower Rice with excess water gently squeezed out
  • 2 tablespoons Olive Oil
  • 1/4 Onion finely chopped
  • 1 Red Bell Pepper chopped
  • 1/2 cup Celery chopped
  • 1 Bay Leaf
  • 2 teaspoons Minced Garlic
  • 1 tablespoon Cajun Seasoning
  • 1/2 cup Beef Broth
  • 1/4 cup Green Onion chopped

Instructions
 

  • Warm the olive oil in a large skillet over medium heat.
  • Add the ground pork to the skillet and sauté for about 3 minutes until it starts to brown.
  • Stir in the shrimp and half of the Cajun seasoning. Continue to sauté until the meat is fully browned and the shrimp are cooked through. Carefully remove the cooked mixture from the skillet and set it aside.
  • Add the chopped onions, red bell peppers, and celery to the same skillet. Cook them until they become tender and slightly softened.
  • Stir in the minced garlic and cook for an additional 30 seconds until it smells fragrant.
  • Add the cauliflower rice, bay leaf, beef broth, and the remaining Cajun seasoning to the skillet. Bring it to a gentle simmer and let it cook for 5 minutes, allowing all the wonderful flavors to meld together.
  • Return the cooked pork and shrimp mixture to the skillet and stir everything together to combine thoroughly.
  • Garnish with fresh green onions just before serving this satisfying and healthy meal!
