Ingredients
  

  • 1 pound Large Shrimp (peeled, deveined, with tails removed)
  • 0.5 pound Ground Pork
  • 4 cups Cooked Cauliflower Rice (with excess water gently pressed out)
  • 2 tbsp Olive Oil
  • 0.25 Onion (chopped)
  • 1 Red Bell Pepper (chopped)
  • 0.5 cup Celery (chopped)
  • 1 Bay Leaf
  • 2 tsp Minced Garlic
  • 1 tbsp Cajun Seasoning
  • 0.5 cup Beef Broth
  • 0.25 Green Onion (chopped, for garnish)

Instructions
 

  • Begin by warming the olive oil in a large skillet over medium heat.
  • Add the ground pork to the skillet and sauté for about 3 minutes until it starts to brown.
  • Stir in the shrimp along with half of the Cajun seasoning. Continue to cook until the pork is fully browned and the shrimp turns pink and is cooked through. Carefully remove this delicious meat mixture and set it aside.
  • Next, add the chopped onions, bell peppers, and celery to the same skillet. Sauté them until they become wonderfully soft and tender.
  • Stir in the minced garlic and cook for just another 30 seconds until you can smell its inviting aroma.
  • Now, add the cooked cauliflower rice, bay leaf, beef broth, and the remaining Cajun seasoning to the skillet. Give everything a good stir and let it simmer gently for 5 minutes, allowing all the flavors to meld beautifully.
  • Finally, return the cooked pork and shrimp back into the skillet. Stir everything together until it's well combined and heated through.
  • Before serving, sprinkle with fresh chopped green onions for a vibrant finish!
