Ingredients
  

Filling

  • 2 pounds ground lamb (or use ground beef for a Cottage Pie twist!)
  • 1/4 cup chopped onion
  • 1/2 red pepper medium, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic minced
  • 1/2 cup dry red wine (or beef/chicken broth for an alcohol-free option)
  • 2 tablespoons fresh rosemary chopped
  • 1/2 teaspoon glucomannan (or xanthan gum, for thickening)

Topping

  • 1 pound cauliflower florets (fresh or frozen)
  • 2 cloves garlic
  • 1/3 cup sour cream (or 2 ounces softened cream cheese)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces grated cheddar cheese (sharp cheddar works wonderfully!)

Instructions
 

  • Let's Make the Creamy Cauliflower Topping First!
    1. Get a large stockpot ready with a steaming basket and a little water at the bottom. Pop in your cauliflower florets and two cloves of garlic. Steam them until they're super tender, which usually takes about 6 to 8 minutes.
  • 2. Drain the steamed cauliflower and garlic really well – this is key for a fluffy topping! Transfer them to a blender or food processor. Add the sour cream, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Blend until you have a smooth, creamy "mashed potato" consistency. Set this delicious topping aside.
  • Now for the Flavorful Meat Filling!
    1. Preheat your oven to a cozy 400°F (200°C).
  • 2. In a large skillet over medium heat, cook your ground lamb until it's mostly browned, about 10-12 minutes. Use a slotted spoon to move the cooked lamb into a large casserole dish, leaving any excess fat in the pan.
  • 3. Add the chopped onion, red pepper, 1 teaspoon salt, and 1/2 teaspoon pepper to the same skillet. Cook until the onion turns soft and translucent, about 5 minutes. Stir in the minced garlic and cook for just 1 more minute until it's fragrant.
  • 4. Pour in the red wine (or broth) and let it bubble gently, cooking until it reduces by about half. Stir in the chopped fresh rosemary, then whisk in the glucomannan (or xanthan gum) to thicken the sauce beautifully.
  • 5. Pour this amazing sauce mixture over the browned lamb in your casserole dish and give it a good stir to combine everything evenly.
  • Assemble & Bake Your Comforting Pie!
    1. Gently spread your creamy cauliflower topping over the meat filling in the casserole dish, making sure it covers it completely.
  • 2. Sprinkle the grated cheddar cheese generously over the cauliflower layer.
  • 3. Bake in your preheated oven for 20 to 25 minutes. You'll know it's ready when the filling is bubbling up and the cheese on top is wonderfully melted and golden.
  • 4. For an extra golden-brown crust, you can carefully broil it for 2 to 4 minutes. Just watch it closely so it doesn't burn!
