Ingredients
  

Meat Layer

  • 1 teaspoon extra-virgin olive oil
  • 1 pound 85% lean ground beef
  • 0.25 cup diced celery
  • 0.25 cup diced red onion
  • 1 minced garlic clove
  • 0.5 cup low-sugar marinara sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Cheese Layer

  • 8 ounces ricotta cheese or cottage cheese
  • 1 cup shredded mozzarella cheese divided: ½ for mixture, ½ for topping
  • 0.5 cup grated Parmesan cheese
  • 2 large eggs lightly beaten
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon minced garlic
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon black pepper

Instructions
 

  • Brown the Beef: Heat 1 teaspoon of olive oil in an oven-safe skillet over medium-high heat. Add the ground beef, diced celery, onion, and minced garlic. Cook for about 5-6 minutes, breaking up the meat with a spoon, until it's no longer pink.
  • Simmer with Sauce: Stir in the marinara sauce, salt, and pepper with the cooked beef. Reduce the heat to low and let it gently simmer while you prepare the cheese topping.
  • Mix the Cheesy Goodness: In a large bowl, combine the ricotta (or cottage cheese), half of the mozzarella, Parmesan, lightly beaten eggs, Italian seasoning, minced garlic, garlic powder, and pepper. Mix everything until well combined and creamy.
  • Assemble & Cook: Carefully spread the prepared cheese mixture evenly over the simmering meat layer in your skillet. Sprinkle the remaining mozzarella cheese over the top. Cover the skillet and cook on medium-low heat for 10-15 minutes, or until the cheese layer is hot and set.
  • Get it Golden: While the lasagna is cooking, preheat your broiler. Once the cheese is set, transfer the skillet to the broiler and cook on high for 2-3 minutes until the cheese is bubbly and beautifully golden brown. Keep a close eye on it to prevent burning!
  • Rest and Serve: Let the Keto Skillet Lasagna rest for 10 minutes before serving. This helps it set for easier slicing. Enjoy your delicious and healthy meal!
