Ingredients
  

  • 350 ml warm water 110°F
  • 7 g instant yeast 2 tsp or 1 envelope
  • 14 g brown sugar or maple syrup 2 tsp
  • 175 g vital wheat gluten
  • 125 g golden flax seeds freshly ground and sifted
  • 100 g oat fiber flour zero carb
  • 10 g salt 1½ teaspoon
  • 9 g nutritional yeast 1 tbsp powder or 2 tbsp flakes
  • 1.5 tsp lactic acid liquid 88%

Instructions
 

  • Combine the warm water (around 110°F), a touch of brown sugar or maple syrup, and the instant yeast. Let this mixture sit for 5-10 minutes until it becomes beautifully foamy, indicating the yeast is active and ready!
  • Add the vital wheat gluten, oat fiber, finely ground golden flax, nutritional yeast, salt, and lactic acid to your bowl. Mix everything together on medium speed for about 8 minutes. You'll know it's ready when the dough is wonderfully smooth and elastic.
  • Lightly knead the dough by hand, then shape it into a smooth ball. Place it on a baking sheet lined with parchment paper. Cover it with a slightly damp towel and let it rest in a warm spot for about 90 minutes to rise.
  • About 15 minutes before your dough finishes rising, preheat your oven to 400°F (204°C). Position your oven racks in the middle and bottom spots, and place an empty metal tray on the bottom rack.
  • Once risen, lightly brush the top of your dough with water, followed by a thin layer of oil. With a sharp knife, carefully score the top to create a lovely pattern.
  • Gently place your bread on the middle oven rack. Quickly pour 75ml of boiling water into the metal tray on the bottom rack and immediately close the oven door to trap the steam. Bake for 30 minutes at 400°F, then increase the temperature to 425°F (218°C) and bake for another 10-15 minutes until your loaf is a beautiful deep golden brown.
  • Patience is key! Allow your delicious bread to cool down entirely before slicing into it. This ensures the best texture and flavor.
