Ingredients
  

  • 2 1/2 cups almond flour
  • 1/2 cup brown sugar replacement
  • 1/3 cup unflavored whey protein powder
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 large eggs
  • 6 tbsp butter melted
  • 1/4 cup almond milk (or water)
  • 1 tsp vanilla extract
  • 1 1/3 cups chopped peaches (about 2 medium)
  • 1/3 cup chopped pecans

Optional Glaze

  • 1/4 cup powdered sweetener
  • 1 1/2 tbsp heavy cream
  • 1/2 tsp vanilla extract
  • Water if needed

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8x4-inch loaf pan and line the bottom with parchment paper, leaving overhang. Grease the parchment too.
  • In a large bowl, whisk together almond flour, sweetener, protein powder, baking powder, cinnamon, and salt.
  • Add eggs, melted butter, almond milk, and vanilla. Stir until well combined.
  • Gently fold in chopped peaches and pecans until evenly distributed.
  • Spread batter into the prepared pan. Bake for 55–65 minutes, until golden brown and firm to the touch. Turn off the oven and let the bread sit inside for 5 more minutes. Then remove and cool completely in the pan.
  • For the glaze (optional): Whisk powdered sweetener, heavy cream, and vanilla in a small bowl. Add a teaspoon of water if too thick. Drizzle over cooled bread.
