- 2 1/2 cups almond flour
- 1/2 cup brown sugar replacement
- 1/3 cup unflavored whey protein powder
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 large eggs
- 6 tbsp butter melted
- 1/4 cup almond milk (or water)
- 1 tsp vanilla extract
- 1 1/3 cups chopped peaches (about 2 medium)
- 1/3 cup chopped pecans
Optional Glaze
- 1/4 cup powdered sweetener
- 1 1/2 tbsp heavy cream
- 1/2 tsp vanilla extract
- Water if needed
Preheat oven to 350°F (175°C). Grease an 8x4-inch loaf pan and line the bottom with parchment paper, leaving overhang. Grease the parchment too.
In a large bowl, whisk together almond flour, sweetener, protein powder, baking powder, cinnamon, and salt.
Add eggs, melted butter, almond milk, and vanilla. Stir until well combined.
Gently fold in chopped peaches and pecans until evenly distributed.
Spread batter into the prepared pan. Bake for 55–65 minutes, until golden brown and firm to the touch. Turn off the oven and let the bread sit inside for 5 more minutes. Then remove and cool completely in the pan.
For the glaze (optional): Whisk powdered sweetener, heavy cream, and vanilla in a small bowl. Add a teaspoon of water if too thick. Drizzle over cooled bread.
