Ingredients
- 6 Bell Peppers any colors
- 2 cups Ground Beef lean
- 1 cup Cauliflower grated
- 1 cup Edam or Gouda Cheese grated
- 1 cup Canned Crushed Tomatoes or Tomato Puree
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Dried Basil
- 1 tsp Mild Paprika
- Sea Salt and Freshly Ground Black Pepper to taste
Set oven to 350°F (180°C).
In a pan over high heat, warm the olive oil. Cook the ground beef for 3-5 minutes, seasoning with salt, pepper, garlic powder, paprika, and dried basil. Stir in the crushed tomatoes and cook 1 more minute. Remove from heat and mix in the grated cauliflower.
Cut bell peppers in half lengthwise (or remove tops to make cups). Scoop out the seeds. Place peppers on a baking sheet.
Fill each pepper with the beef-cauliflower mixture. Top with grated cheese. Pour about ½ cup of water into the bottom of the pan (this keeps the peppers moist).
Bake for 25-30 minutes until peppers are tender. Add a little more water to the pan if needed while baking. Serve hot.
