Keto Sweetened Condensed Milk
A delicious homemade keto-friendly sweetened condensed milk, perfect for low-carb desserts and beverages. It's easy to make and thickens beautifully as it cools.

- 2 1/4 cups heavy cream
- 1/2 cup monk fruit/allulose blend
- 1/3 cup unsalted butter
- 1 teaspoon vanilla extract
In a medium saucepan, combine everything *except* the vanilla extract.
Place the pan over low heat and let it gently simmer for about 20-30 minutes. You'll know it's ready when the mixture has visibly thickened and reduced by almost half. A wider pan can speed up this process!
Once it's thickened to your liking, remove the saucepan from the heat and whisk in the vanilla extract until it's fully blended.
Allow the mixture to cool completely to room temperature. It will continue to thicken significantly as it chills!
Once cool, store your homemade sweetened condensed milk in the fridge for 5-7 days.
When you're ready to use it in a recipe, it might be quite firm from the fridge. Simply warm it in the microwave for 6-8 seconds, or stir in a tiny bit of hot water to get it perfectly smooth and pourable!
*Important:* Stir frequently and make sure to stay nearby, as the mixture needs attention to prevent sticking or burning. My batch was perfect at 28 minutes.
