Keto Sweetened Condensed Milk

A delicious homemade keto-friendly sweetened condensed milk, perfect for low-carb desserts and beverages. It's easy to make and thickens beautifully as it cools.

Ingredients
  

  • 2 1/4 cups heavy cream
  • 1/2 cup monk fruit/allulose blend
  • 1/3 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions
 

  • In a medium saucepan, combine everything *except* the vanilla extract.
  • Place the pan over low heat and let it gently simmer for about 20-30 minutes. You'll know it's ready when the mixture has visibly thickened and reduced by almost half. A wider pan can speed up this process!
  • Once it's thickened to your liking, remove the saucepan from the heat and whisk in the vanilla extract until it's fully blended.
  • Allow the mixture to cool completely to room temperature. It will continue to thicken significantly as it chills!
  • Once cool, store your homemade sweetened condensed milk in the fridge for 5-7 days.
  • When you're ready to use it in a recipe, it might be quite firm from the fridge. Simply warm it in the microwave for 6-8 seconds, or stir in a tiny bit of hot water to get it perfectly smooth and pourable!

Notes

*Important:* Stir frequently and make sure to stay nearby, as the mixture needs attention to prevent sticking or burning. My batch was perfect at 28 minutes.
