Ingredients
  

Meat Base

  • 2 lbs ground beef or pork seasoned with salt and pepper
  • 3 tbsp taco seasoning
  • 1 tbsp chili powder optional
  • 1 jalapeño medium, seeded and minced
  • 2 tbsp tomato paste
  • 1/2 cup water for meat sauce
  • 1 cup shredded cheddar cheese

Topping Batter

  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 6 tbsp butter melted
  • 1/8 tsp cornbread flavoring optional
  • 1/4 - 1/2 cup water for topping batter

Instructions
 

  • Preheat your oven to 350°F.
  • Heat up a 10-inch oven-proof skillet over medium heat. Brown your ground meat, breaking up any chunks, and season with a pinch of salt and pepper. Stir in the taco seasoning, chili powder, and fresh jalapeño.
  • In a small bowl, whisk the tomato paste with 1/2 cup of water until smooth. Pour this rich sauce into the skillet, mix it well with the seasoned meat, and turn off the heat. Scatter the cheddar cheese evenly over the top.
  • In a separate bowl, whisk together the coconut flour, almond flour, baking powder, and salt. Stir in the eggs, melted butter, and optional cornbread flavoring. Slowly add the remaining water a little at a time until you get a thick, spreadable batter.
  • Scoop the batter over your meat mixture and gently spread it all the way to the edges.
  • Bake for 25 to 35 minutes until the cornbread crust is golden brown and firm. Let this healthy comfort meal cool for 10 minutes before slicing and enjoying!
