Ingredients
  

  • 1 prepared savory almond flour pie crust
  • 6 slices bacon chopped and cooked until crispy
  • 8 ounces goat cheese at room temperature
  • 3 large eggs at room temperature
  • 3/4 cup heavy whipping cream at room temperature
  • 2 cloves garlic minced
  • 1 tablespoon fresh basil chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 medium tomatoes thinly sliced (about 7 ounces)

Instructions
 

  • Preheat your oven to 325°F (160°C) and lightly grease a 10-inch ceramic tart pan.
  • Carefully press your prepared savory almond flour crust evenly into the bottom and up the sides of the tart pan.
  • Bake the crust for 15 to 20 minutes, just until it's lightly golden. Remove it from the oven and let it cool completely.
  • Increase the oven temperature to 350°F (175°C).
  • Sprinkle about half of your crispy, cooked bacon evenly over the cooled tart crust.
  • Place the room-temperature goat cheese into a food processor and pulse until it's nicely crumbly.
  • Add the eggs, heavy cream, minced garlic, fresh basil, salt, and pepper to the food processor. Blend until the mixture is completely smooth, scraping down the sides with a rubber spatula as needed.
  • Gently pour this creamy, delicious filling into the prepared tart crust.
  • Arrange the thinly sliced tomatoes decoratively over the filling, overlapping them slightly if needed.
  • Sprinkle the remaining crumbled bacon on top for extra flavor.
  • Bake for approximately 30 minutes, or until the center of the tart is set and no longer jiggles when you gently shake the pan.
  • Let the tart cool for 10 to 20 minutes before slicing and serving.
