Preheat your oven to a cozy 350°F (180°C) and line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine your almond flour with any seasonings you like – a pinch of salt or paprika works wonders!
In a separate microwave-safe bowl, melt your mozzarella cheese for about 1-2 minutes until it's wonderfully gooey and soft.
Pour the melted cheese into the almond flour mixture. Stir diligently until everything comes together into a thick, uniform dough. It might take a minute, but keep going!
Place one sheet of parchment paper on your kitchen counter. Lay the dough ball on it, then top with another piece of parchment paper.
Using a rolling pin, roll the dough out really thin – aim for about 1/6 inch thick. This is the secret to super crispy chips!
Grab a pizza cutter or a sharp knife and carefully slice the flattened dough into classic triangular chip shapes.
Arrange your uncooked chip triangles in a single layer on your prepared baking sheet.
Bake for 12-15 minutes, or until the edges are beautifully golden brown and the chips look perfectly crispy.
For an air fryer option: Place chips in a single layer and air fry at 350°F (180°C) for 8-10 minutes.
Let the chips cool completely on the baking sheet. They'll crisp up even more as they reach room temperature!
