  • Parchment Paper
  • Mixer
  • Paring Knife

Ingredients

Dry Ingredients

  • 1 cup Vanilla Whey Protein Powder
  • 1 cup Superfine Almond Flour
  • 1/3 cup Coconut Flour
  • 2 tsp Xanthan Gum
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt

Wet Ingredients

  • 1/2 cup Unsalted Butter, softened
  • 2/3 cup Sugar Substitute
  • 2 Large Eggs
  • 1/2 tsp Almond Extract
  • Green Food Coloring (optional)

Decoration

  • 28 Whole Blanched Almonds
  • Red Food Coloring (optional)

Instructions

  • Line two baking sheets with parchment paper.
  • In a bowl, whisk the protein powder, almond flour, coconut flour, xanthan gum, baking powder, and salt. Set aside.
  • In a large bowl, beat the softened butter and sugar substitute until creamy and fluffy.
  • Beat in the eggs and almond extract. If using green food coloring, add it now.
  • Turn the mixer to low speed and slowly add the dry ingredients. Mix until a smooth dough forms.
  • Wrap the dough in plastic wrap and chill for 1 hour.
  • Scoop out 1-tablespoon-sized pieces of dough. Roll each piece into a finger shape and place on the baking sheets.
  • Press a blanched almond into one end as a fingernail. Optionally, remove, paint the bed with red food coloring, and replace.
  • Use a paring knife to cut shallow lines across each finger for knuckles.
  • Cover and chill for another 30 minutes. Preheat oven to 350°F (175°C).
  • Bake for 8-10 minutes until bottoms are lightly golden. Cool completely.
