Ingredients
  

Pork Meatballs

  • 1 pound ground pork (or ground chicken)
  • 1 medium green onion finely chopped
  • 1 tablespoon tamari (gluten-free soy sauce alternative)
  • 2 teaspoons fish sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Soup

  • 1 tablespoon sesame oil (for cooking meatballs)
  • 1 tablespoon sesame oil (for sautéing vegetables)
  • 4 medium cremini mushrooms sliced
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 4 cups chicken broth
  • 2 baby bok choy quartered
  • 1 medium green onion chopped (for finishing)

Garnish

  • Toasted sesame oil
  • tamari
  • chili oil or chili sauce

Instructions
 

  • Combine the ground pork, finely chopped green onion, tamari, fish sauce, salt, pepper, and optional red pepper flakes in a large bowl. Use your hands to mix and squeeze everything really well until it's nicely bound. Roll the mixture into about 20 small, tight meatballs and set them aside on a parchment-lined tray.
  • Heat 1 tablespoon of sesame oil in a large pot or Dutch oven over medium heat. Gently add the meatballs, turning to brown them on all sides. You might need to cook them in batches, depending on your pot size. Once browned, remove them to a plate; they don't need to be fully cooked yet.
  • Drain any excess fat from the pot, then return it to medium heat. Add another tablespoon of sesame oil. Once hot, toss in the sliced mushrooms and minced garlic. Sauté for a few minutes until they smell wonderful. Stir in the minced ginger and cook for an additional 30 seconds.
  • Pour in the chicken broth and bring it to a gentle simmer. Carefully add the browned meatballs back into the simmering broth. Let them cook for about 5 minutes, ensuring they are cooked through.
  • Stir in the quartered baby bok choy and cook for just 1-2 minutes until it's slightly wilted. Remove the pot from the heat and stir in the remaining chopped green onion.
  • Serve your comforting soup immediately! Offer toasted sesame oil, tamari, or chili oil on the side for guests to customize their bowl to their liking.
