Crispy, golden, and packed with flavor, these keto-friendly zucchini fritters are the perfect low-carb side dish or snack. Made with feta and pork rinds for that extra crunch!
Place your shredded zucchini in a strainer, sprinkle with salt, and let it drain for 1 hour. Wrap the zucchini in a clean kitchen towel and squeeze out as much liquid as possible to ensure your fritters get beautifully crispy.
Whisk the crushed pork rinds, coconut flour, marjoram, and pepper together in a large bowl. Fold in the crumbled feta and chopped green onions.
Add the well-squeezed zucchini and eggs to the bowl. Mix thoroughly until a batter forms, then use your hands to shape the mixture into 6 equal patties.
Warm your healthy avocado or olive oil in a skillet over medium heat. Fry the patties for 4 to 5 minutes until the bottom is beautifully golden, then gently flip and cook the other side until crispy.
Transfer your hot fritters to a paper towel-lined plate to drain any excess oil for a few minutes, then serve warm!
