Instructions
Toss the cauliflower florets with 1 1/2 teaspoons of kosher salt in a large bowl and let them sit for 15 minutes.
Toss panko with oil; bake at 400°F until golden brown (4-6 mins).
Whisk flour, soy milk, remaining salt, garlic powder, paprika, and pepper into a batter.
Dip cauliflower into batter, roll in toasted panko, and place on a parchment-lined baking sheet.
Bake for 25 to 35 minutes until crisp.
Simmer honey, butter, cayenne, garlic, and paprika in a pot until smooth. Cool slightly.
Drizzle sauce over nuggets, top with sea salt, and serve immediately.
