A crispy, golden appetizer perfect for your Labor Day celebration. These gnocchi bites are fried to perfection and served with a warm marinara dipping sauce.
1/3cupPecorino Romanograted, plus more for topping
3Tbsp.all-purpose flour
Peanut or vegetable oilfor frying
Kosher salt and black pepperto taste
fresh parsleyfinely chopped, for serving

Instructions
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float and are tender (about 2–3 minutes). Drain, rinse with cold water, then drain again. Spread them on a baking sheet and let cool for 5 minutes.
In a shallow bowl, whisk the eggs with a pinch of salt and pepper. In another shallow bowl, mix the bread crumbs and Pecorino Romano.
Sprinkle the cooled gnocchi with flour, then toss gently to coat. Season with a little salt and pepper.
Pour oil into a large heavy skillet to a depth of about 1/8 inch. Heat over medium heat until shimmering. Working in batches, dip the gnocchi into the egg mixture, letting excess drip off, then roll them in the bread crumb mixture until evenly coated. Return to the baking sheet.
Fry the gnocchi in batches, turning occasionally, until golden brown and crispy (2–3 minutes). Transfer to a paper towel–lined plate and sprinkle with a pinch of salt.
Arrange the fried gnocchi on a platter, top with extra Pecorino and fresh parsley. Serve warm with marinara sauce for dipping.
