Steak Marinade
- 1.5 lbs sirloin steak, cut into 1" cubes
- 1.5 tsp baking soda
- 1.5 tsp kosher salt
- 1 tbsp chili-garlic sauce
- 1 tbsp hoisin sauce
- 1 tbsp toasted sesame oil
- 2 tbsp low-sodium soy sauce
Glaze & Veggies
- 2 cloves garlic, grated
- 1 inch ginger, peeled and grated
- 6 tbsp honey
- 2 tbsp rice vinegar
- 0.25 cup low-sodium soy sauce
- 1 large red onion, cut into 3/4" pieces
- 1 tbsp neutral oil
Make the marinade: In a large bowl, whisk together chili-garlic sauce, hoisin, sesame oil, and 2 tbsp soy sauce. Toss the steak cubes with salt and baking soda, then add to the bowl and coat well. Cover and marinate in the fridge for at least 2 hours.
Make the glaze: In a small saucepan over medium-high heat, combine the ginger, garlic, honey, rice vinegar, and the remaining 1/4 cup soy sauce. Stir and let it bubble until thick and reduced (about 10 minutes). Set aside to cool.
Prep the onion: Toss the onion pieces with 1/2 tsp salt and 1 tbsp neutral oil. Separate the layers.
Assemble skewers: Thread steak and onion pieces alternately onto skewers.
Grill: Preheat your grill to medium heat. Grill the skewers, turning every 2–3 minutes, until the steak is cooked to your liking (about 8–10 minutes total). During the last minute, brush generously with the glaze.
Serve: Serve over cooked white rice, garnished with sesame seeds and scallions.
