A sophisticated twist on a comfort food classic. These bite-sized portions of creamy lobster mac and cheese, topped with crispy bread crumbs, are perfect for your Labor Day celebrations.
Preheat your oven to 400°F and lightly spray a 24‑cup mini muffin tin with cooking spray.
Bring a large pot of salted water to a boil. Cook the pasta until very al dente (about 5–6 minutes) — it will finish cooking in the oven. Drain and set aside.
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shallot and garlic and cook, stirring often, until fragrant and the shallot is translucent (about 3 minutes). Whisk in the flour and cook for 1 minute until lightly browned and bubbly. Reduce heat to medium‑low, pour in the heavy cream, and stir until it thickens slightly (about 3 minutes).
Remove the skillet from heat. Stir in the cream cheese, gouda, and cheddar until fully melted. Season with salt. Gently fold in the cooked lobster and the undercooked pasta.
In a small skillet over medium heat, melt the remaining 1 teaspoon of butter. Add the bread crumbs and stir until they are fragrant and evenly coated. Remove from heat.
Using two small spoons or a small cookie scoop, divide the pasta mixture evenly among the prepared muffin cups. Sprinkle a little of the buttered bread crumbs on top of each bite.
Bake for 20–25 minutes, until the tops are golden brown and bubbly. Remove from the oven, top with fresh chives, and season with a crack of black pepper. Let cool slightly before serving.
