Labor Day Peach Bruschetta

- 1 large baguette cut into ¾-inch thick slices
- 3 large peaches chopped
- 1 cup cherry tomatoes quartered
- 2 Tbsp. fresh basil chopped
- 1 Tbsp. extra-virgin olive oil
- to taste Kosher salt
- 1 cup ricotta cheese
- 1 tsp lemon zest finely grated
- hot honey optional, for drizzling
Preheat oven to 350°F. Arrange baguette slices on a baking sheet. Bake for 15 minutes, flipping halfway, until lightly toasted.
In a large bowl, toss together chopped peaches, cherry tomatoes, basil, and olive oil. Season with a pinch of salt.
In a small bowl, mix ricotta with lemon zest. Season with salt and pepper to taste.
Spread a thin layer of the ricotta mixture onto each toast. Top with the peach-tomato mixture. Drizzle with hot honey if desired. Serve immediately.
