Lemon Butter Salmon Rice Muffins

Ingredients
  

  • 2 cups cooked rice
  • 3/4 cup feta cheese
  • 1/2 cup cooked salmon (5 ounces)
  • 1 tablespoon onion flakes
  • 1 tablespoon parsley flakes
  • 1 teaspoon dried dill
  • 1/2 teaspoon seasoning salt
  • 2 large eggs beaten
  • 2 tablespoons milk

Lemon Butter Sauce

  • 2 tablespoons melted butter
  • 1 tablespoon lemon juice
  • 1/4 teaspoon seasoning salt
  • 1/4 teaspoon parsley flakes

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, flake the salmon and mix in the other ingredients until well combined.
  • Evenly distribute the mixture into 6 greased muffin cups, about 1/2 cup each.
  • Bake for 16-18 minutes until golden brown on top.
  • For a crispier finish, broil for a couple of minutes.
  • Meanwhile, mix all Lemon Butter Sauce ingredients in a small bowl. Drizzle the sauce over the muffins and enjoy!
