- 2 cups cooked rice
- 3/4 cup feta cheese
- 1/2 cup cooked salmon (5 ounces)
- 1 tablespoon onion flakes
- 1 tablespoon parsley flakes
- 1 teaspoon dried dill
- 1/2 teaspoon seasoning salt
- 2 large eggs beaten
- 2 tablespoons milk
Lemon Butter Sauce
- 2 tablespoons melted butter
- 1 tablespoon lemon juice
- 1/4 teaspoon seasoning salt
- 1/4 teaspoon parsley flakes
Preheat your oven to 375°F (190°C).
In a medium bowl, flake the salmon and mix in the other ingredients until well combined.
Evenly distribute the mixture into 6 greased muffin cups, about 1/2 cup each.
Bake for 16-18 minutes until golden brown on top.
For a crispier finish, broil for a couple of minutes.
Meanwhile, mix all Lemon Butter Sauce ingredients in a small bowl. Drizzle the sauce over the muffins and enjoy!
