Instructions
Preheat your oven to 180°C (356°F).
Mix oil, sugar, and vanilla sugar until smooth.
Add eggs one at a time, blending well.
Incorporate flour and baking powder gradually.
Stir in yogurt and lemon juice until batter is uniform.
Prepare streusel by combining butter, flour, and sugar until crumbly.
Fill muffin tins with batter, sprinkle streusel on top.
Bake for approximately 25 minutes until golden.
Mix powdered sugar with lemon juice to make glaze, then drizzle over cooled muffins.
Notes
Feel free to adjust the amount of lemon juice for more or less zest. Muffins are best enjoyed fresh!
