Ingredients
  

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup granular sweetener (erythritol-based preferred)
  • 1 3/4 cup almond flour
  • 1/2 cup whey protein powder (vanilla or unflavored)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • zest of 1 lemon
  • 3 tbsp fresh lemon juice
  • 1 1/2 tbsp poppyseeds

Instructions
 

  • Get your oven ready: Preheat to 325°F (160°C). Line a standard 12-cup muffin pan with silicone or parchment liners.
  • Smooth out the wet ingredients: In a blender, combine the cottage cheese, eggs, and sweetener. Blend until completely smooth and creamy.
  • Add the dry goodness: Now, add the almond flour, protein powder, baking powder, and salt to the blender. Blend again until everything is well mixed.
  • Infuse with lemon: Stir in the fresh lemon zest and lemon juice. Blend once more until fully incorporated. If your batter seems a bit too thick, you can add an extra tablespoon of liquid (like water or milk) at a time until it's thick but easy to pour.
  • Mix in the poppyseeds: Gently fold the poppyseeds into the batter by hand – no blending them!
  • Fill your muffin cups: Divide the batter evenly among the 12 prepared muffin cups, filling them almost to the brim.
  • Bake to perfection: Pop them in the oven for 25 to 30 minutes. They're done when the tops look puffed up and feel firm to the touch.
  • Cool and enjoy: Let the muffins cool in the pan for a bit. Once they're cool enough to handle, gently take them out of the liners to prevent sticking. Dig in and enjoy your healthy, zesty treat!
