Ingredients
  

Batter

  • 1 cup grated zucchini squeezed dry to remove excess moisture
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 lemon zest
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk

Instructions
 

  • Heat your oven to 350°F and lightly grease a 9x9-inch baking dish.
  • In a large bowl, whip the softened butter and sugar together until light and fluffy.
  • Whisk in the eggs, fresh lemon juice, lemon zest, and vanilla extract until beautifully smooth and fragrant.
  • In a separate bowl, gently combine the flour, baking powder, baking soda, and salt.
  • Gradually stir the dry ingredients into the wet mixture until just combined to keep the batter nice and light.
  • Gently fold in the grated zucchini, ensuring it is evenly spread throughout.
  • Pour the batter into your prepared dish, smoothing it out to the edges.
  • Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.
  • For the glaze, whisk the powdered sugar and milk together in a small bowl until smooth.
  • Drizzle this light glaze over the cooled bars, garnish with extra lemon zest if desired, let it set, and slice into delicious squares!
