Instructions
Heat your oven to 350°F and lightly grease a 9x9-inch baking dish.
In a large bowl, whip the softened butter and sugar together until light and fluffy.
Whisk in the eggs, fresh lemon juice, lemon zest, and vanilla extract until beautifully smooth and fragrant.
In a separate bowl, gently combine the flour, baking powder, baking soda, and salt.
Gradually stir the dry ingredients into the wet mixture until just combined to keep the batter nice and light.
Gently fold in the grated zucchini, ensuring it is evenly spread throughout.
Pour the batter into your prepared dish, smoothing it out to the edges.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely.
For the glaze, whisk the powdered sugar and milk together in a small bowl until smooth.
Drizzle this light glaze over the cooled bars, garnish with extra lemon zest if desired, let it set, and slice into delicious squares!
