Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 cup plain unsweetened whole milk Greek yogurt
  • 1/2 cup whole milk
  • 3 tablespoons unsalted butter melted and slightly cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions
 

  • Combine Dry: In a medium mixing bowl, whisk together the flour, baking powder, and salt until well combined. Set this mixture aside.
  • Mix Wet: In a separate, larger mixing bowl, whisk together the sugar, Greek yogurt, milk, melted butter, eggs, and vanilla extract until smooth.
  • Gently Combine: Pour the dry ingredient mixture into the wet ingredients. Stir gently with a rubber spatula until just combined. A few lumps are perfectly normal and help keep your pancakes fluffy!
  • Heat Skillet: Place a nonstick skillet or griddle over medium heat. Lightly coat the pan with a little extra butter.
  • Cook Pancakes: Spoon about ΒΌ cup of batter for each pancake onto the hot skillet. Cook for 3-4 minutes, or until you see bubbles forming on the surface and the edges look set. Carefully flip them over and cook for an additional 2-3 minutes, until they are golden brown and cooked through.
  • Serve Hot: Remove the cooked pancakes to a plate or cooling rack. Add more butter to the pan as needed and continue cooking the remaining batter in batches. Enjoy your delicious pancakes warm!
