Ingredients
  

  • 2 large egg whites
  • 1 cup granulated sugar
  • 0.5 tsp vanilla extract
  • 0.25 tsp salt
  • 1 cup semi-sweet chocolate chips
  • whipped cream (for serving, optional)
  • chocolate shavings or sprinkles (for garnish, optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This makes for easy cleanup!
  • In a clean, dry mixing bowl, whisk the egg whites until they form soft, fluffy peaks. This usually takes about 2-3 minutes.
  • Gradually add the granulated sugar to the whipped egg whites, continuing to whisk until the mixture becomes glossy and holds stiff peaks. This should take another 3-4 minutes.
  • Gently fold in the vanilla extract and salt until everything is well combined.
  • Carefully fold in the semi-sweet chocolate chips, making sure they are nicely distributed throughout the mixture. Don't overmix!
  • Use a spoon or a cookie scoop to place rounded dollops of the cookie mixture onto your prepared baking sheet, leaving about 2 inches between each cookie.
  • Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the cookies are lightly golden and feel crisp on top.
  • Once baked, remove them from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For the absolute best flavor and texture, allow your cookies to rest for at least 4 hours, or even better, overnight!
