Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This makes for easy cleanup!
In a clean, dry mixing bowl, whisk the egg whites until they form soft, fluffy peaks. This usually takes about 2-3 minutes.
Gradually add the granulated sugar to the whipped egg whites, continuing to whisk until the mixture becomes glossy and holds stiff peaks. This should take another 3-4 minutes.
Gently fold in the vanilla extract and salt until everything is well combined.
Carefully fold in the semi-sweet chocolate chips, making sure they are nicely distributed throughout the mixture. Don't overmix!
Use a spoon or a cookie scoop to place rounded dollops of the cookie mixture onto your prepared baking sheet, leaving about 2 inches between each cookie.
Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the cookies are lightly golden and feel crisp on top.
Once baked, remove them from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
