Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup chopped onions
  • 0.5 cup chopped green peppers
  • 1 pound lean ground beef
  • 3 cups beef broth
  • 1 can diced tomatoes with green chilies 14.5 oz
  • 4 oz tomato sauce
  • 0.5 cup light cream or half-and-half (optional)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional, for heat)

Instructions
 

  • For an easy one-pot meal, heat a large Dutch oven or pot over medium-high heat. Add olive oil, chopped onions, and green peppers, then sauté for 2-3 minutes until soft and fragrant.
  • Next, add the lean ground beef along with the chili powder, cumin, garlic powder, onion powder, and smoked paprika. Break up the beef with a spoon and cook for 3-4 minutes until no longer pink.
  • Drain any excess fat thoroughly for a lighter soup.
  • Stir in the beef broth, diced tomatoes with green chilies, and tomato sauce.
  • Reduce heat to low, cover the pot, and simmer for 10-15 minutes to allow the flavors to meld beautifully.
  • Remove the lid, then stir in the light cream or half-and-half if you're using it.
  • Taste and season with salt, pepper, and red pepper flakes (if desired) to your preference.
  • Ladle into bowls and serve warm with your favorite healthy toppings.
