- 3 pounds red potatoes
- 8 ounces cream cheese softened
- 4 tablespoons butter softened
- 8 ounces bacon cooked crispy and crumbled
- 8 ounces shredded sharp Cheddar cheese (or a mix like Monterey Jack, Colby Jack)
- 6 green onions thinly sliced (for the potatoes)
- 6 cups prepared pulled pork 6 to 8 cups total, store-bought or homemade
- 4 ounces Colby Jack cheese shredded (for topping)
- 3 green onions sliced (for topping, optional)
- Cooking spray
- Salt for potato water
Lightly spray a 9x13 inch baking dish with cooking spray. Preheat your oven to 350°F (175°C).
Place the potatoes in a large pot and cover them with water. Add a generous pinch of salt. Bring the water to a boil and cook until the potatoes are fork-tender. Drain all the water completely.
Return the drained potatoes to the pot. Roughly mash them, then add the softened cream cheese, butter, crispy bacon, the first 6 sliced green onions, and 8 ounces of shredded cheese. Mash everything together until it's smooth and well combined. Spread this creamy potato mixture evenly into your prepared baking dish.
Spread the pulled pork evenly over the mashed potato layer. Then, sprinkle the remaining 4 ounces of shredded Colby Jack cheese on top of the pulled pork.
Cover the baking dish with aluminum foil. Bake for 15 minutes. After 15 minutes, remove the foil and bake for another 5 minutes, or until the cheese is bubbly and melted, and the casserole is heated through.
For an extra burst of freshness, sprinkle with the additional sliced green onions if desired. Serve immediately and enjoy your comforting casserole!
