Ingredients
  

  • 6 tablespoons unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 3/4 teaspoon baking soda
  • 1 1/4 cups all-purpose flour
  • 30 miniature Reese's Peanut Butter Cups
  • Jumbo heart sprinkles

Instructions
 

  • Combine the softened butter, creamy peanut butter, brown sugar, and granulated sugar in a spacious bowl. Mix with an electric mixer on medium speed for just 30 seconds until light and fluffy.
  • Gently stir in the vanilla extract and the egg, mixing for another 10 seconds until well combined.
  • Add the baking soda and mix on low speed for 10 seconds. Then, gradually add the all-purpose flour, mixing until it's just incorporated and a soft dough forms. Avoid overmixing to keep them wonderfully tender!
  • Scoop the dough into 1-tablespoon sized balls. Lightly roll each scoop with your hands to make smooth balls, then place them into a greased mini muffin tin. Don't forget to spray the tin for easy removal later!
  • Bake at 350°F for exactly 8 minutes. Trust the process – they might look a little soft, but they'll finish baking as they cool, ensuring a perfectly tender cookie. While they're baking, unwrap those miniature Reese's cups!
  • As soon as you take the cookies out of the oven, immediately press a miniature Reese's Peanut Butter Cup into the center of each warm cookie.
  • Once the chocolate starts to melt slightly, gently place a jumbo heart sprinkle right in the middle of each cookie cup.
  • To help the chocolate set quickly, pop the pan into the refrigerator for 10-15 minutes. Once cooled and firm, use the tip of a spoon to carefully lift each cookie cup out of the pan. Serve these delightful treats and spread some love!
