Ingredients
  

  • 2 cups shredded chicken
  • 1 cup cottage cheese
  • 8 ounces cream cheese softened
  • 6 tablespoons buffalo sauce
  • 1/4 cup chopped green onions
  • 2 teaspoons ranch seasoning
  • 2 teaspoons minced garlic
  • 1 1/2 cups shredded Colby Jack cheese

Instructions
 

  • In a food processor or blender, combine the cottage cheese and softened cream cheese. Pulse until it's wonderfully smooth and creamy.
  • Now, blend in the ranch seasoning, minced garlic, and zesty buffalo sauce until everything is perfectly mixed and fragrant.
  • In a separate mixing bowl, combine your cooked, shredded chicken, a handful of fresh chopped green onions, and 1 cup of the shredded Colby Jack cheese.
  • Pour your creamy buffalo sauce mixture over the chicken and cheese. Give it a good stir until everything is evenly coated and ready to bake.
  • Transfer this delicious mixture into a small oven-safe baking dish.
  • Sprinkle the remaining 1/2 cup of shredded Colby Jack cheese evenly over the top.
  • Pop it under the broiler for 5-8 minutes, or until the cheese is beautifully melted, bubbly, and has a golden-brown finish. Keep a close eye on it to prevent burning!
  • Garnish with a little extra chopped green onion before serving hot with your favorite low-carb dippers like celery sticks or bell pepper slices.
