  • 1 zucchini grated (and squeezed to remove excess moisture)
  • 0.5 cup butter melted
  • 3 tbsp granulated sugar substitute
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1.5 cups almond flour
  • 2 tbsp coconut flour
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup sugar-free chocolate chips
  • 0.5 cup chopped walnuts, peanuts, or pecans (optional)

Instructions
 

  • Prepare the Zucchini: First, grate your zucchini. To ensure your bread isn't soggy, gently squeeze out any extra moisture using a paper towel.
  • Combine Wet Ingredients: In a large mixing bowl, stir together the melted butter with your chosen granulated sugar substitute. Mix until well blended.
  • Add Eggs & Vanilla: Incorporate the three eggs and the vanilla extract. Give it a good mix until everything is smooth and combined.
  • Fold in Dry Ingredients: Carefully add the almond flour, coconut flour, baking soda, and salt to the wet mixture. Stir gently until just combined, being careful not to overmix.
  • Mix in Goodies: Now, gently fold in the prepared zucchini, sugar-free chocolate chips, and your optional chopped nuts. Pour the batter evenly into a prepared loaf pan. If you like, sprinkle a few extra chocolate chips on top for a finishing touch!
  • Bake Perfectly: Place the loaf pan in an oven preheated to 325°F (160°C). Bake for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool Down: Once baked, remove the bread from the oven and let it cool completely in the pan before slicing. This helps it firm up perfectly.
