Ingredients
  

  • 1 cup cottage cheese
  • 2 tbsp sugar-free caramel syrup
  • 1 tsp vanilla
  • salt pinch
  • 1 cup keto chocolate chips

Instructions
 

  • In a mixing bowl, gently combine the cottage cheese, caramel syrup, vanilla, and a tiny pinch of salt until everything is nicely blended.
  • Spoon dollops of this yummy mixture onto a baking sheet lined with parchment paper. These will be your clusters!
  • Pop the sheet into the freezer. Once the clusters start to firm up a bit (after about 30 minutes to an hour), you can quickly shape them into neater, rounder balls if you like.
  • Return your clusters to the freezer for another hour to get them perfectly solid.
  • Meanwhile, melt your keto chocolate chips. Place them in a microwave-safe bowl and heat in short 30-second bursts, stirring in between, until smooth and glossy.
  • One by one, dip your frozen cottage cheese clusters into the melted chocolate, coating them completely. Place them back on the parchment paper and let the chocolate set in the freezer or fridge before enjoying your healthy, chocolatey treat!
